Diving into the Crispy Layers of African Culinary Art

  • 50 grams of glass noodles, soaked and chopped
  • 1 carrot, julienned
  • 1/2 cabbage, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fish sauce or soy sauce
  • Salt and pepper to taste
  • Vegetable oil for frying

Directions for the perfect Nems:

  1. Filling Preparation: In a large pan, sauté the onions and garlic until translucent. Add the minced meat and cook thoroughly. If using shrimp, add it next and cook until pink. Incorporate the julienned carrot and sliced cabbage. Stir in the glass noodles, fish sauce or soy sauce, and season with salt and pepper. Mix well and let cool.
  2. Wrapping the Nems: Soak the rice paper in warm water until it becomes soft and pliable. Lay it flat on a clean surface. Place a portion of the filling near the bottom end of the wrapper. Fold the bottom over the filling, then fold the sides inward and roll it up tightly.
  3. Frying to Golden Perfection: In a deep frying pan, heat the vegetable oil. Once hot, gently place the Nems into the oil, frying them until they turn golden brown and crispy. Remove and drain on paper towels.
